Curried Green Papaya and Tomatoes

Here's the 2nd recipe in our 30 Day Nature Isle Recipe Marathon.

Curried Green Papaya and Tomatoes

1 small green papaya 
 1 tomato 
1 cup chopped celery 
1 onion sliced 
 7 cloves garlic (chopped) 
3 tbsp curry
Sea salt
Coconut/olive oil 

Peel and cut green papaya into chunks. Saute ¾ of the onion slices and ¾ of the chopped garlic in 2 tbsp oil. Add curry, green papaya and ¾ of the chopped celery. Add water to barely cover the green papaya and let cook. Cut tomato into chunks. When green papaya is cooked, add the rest of the onion, garlic, celery and tomato. Mix in. Turn off heat. 
Serve and enjoy!

Note: Some people like lots of curry and others don't.  Please feel free to adjust the amount of curry and salt to your taste.
