Lunch Ideas

This is Lunch Ideas Showcase #2. Every Thursday I'm featuring some of the lunches we've eaten as a family to help trigger ideas for your own vegetarian lunch.  Some of the picture may be from some time ago when I was waiting on God for a camera so please excuse the picture quality.  If there is a recipe available I have linked the recipe name in red to the recipe so click away and enjoy.

Breakfast Ideas

Here is Breakfast Showcase #1. These are some of the breakfasts we've had. Like I wrote in the 30 Day Nature Isle Recipe Marathon Wrap Up, these are to help trigger ideas as to how you can incorporate more vegetables into your breakfast meal. Some of the pictures are not recent so the picture quality is not as good as others.  In cases where the recipe is available I've linked the caption below the picture to the recipe so you can click it to get the recipe. Enjoy!

Red and White Cabbage Salad Recipe
White Cabbage, Red Cabbage & Avocado Salad with Raw ripe plantains and sardines

Pumpkin and Christophene(Chayote) with fish, avocado and crackers
Pumpkin & Christophene with fish, avocado & crackers

Bok Choy and Tomato Saute
Pita Bread with Bok Choy(Chinese Cabbage) & Tomato Saute

Tossed Vegetable Quiche

This is the 12th recipe in our 30 Day Nature Isle Recipe Marathon.  This recipe came about when I had some leftover tossed salad in the fridge that was just a tad wilted and could not be served as is.  Hence the name "tossed".  So feel free to omit any of the vegetables and add any of your favorites.



Tossed Vegetable Quiche


4 eggs
Tomato, diced
Onion, sliced/chopped 
Garlic, grated
Spinach, chopped
Beets, grated
Lettuce, shredded
Carrot, grated
Cabbage, shredded

Pumpkin, grated
Parsley, chopped
Celery, chopped
Sea salt
Curry


Method
Toss vegetables together. Add salt, curry and garlic. Whisk egg and add to tossed vegetables.  Grease baking dish and pour mixture in.  Bake at 350 degrees for about 25 minutes.  Check at about 15 minutes to ensure that the dish doesn't burn because all ovens are not created equal.
Cut into slices. Serve and enjoy!

N.B. This dish can be re-created over and over and never be the same.  Just change the vegetable combinations and you have a variety on your hands.

Recipe:Tuna & Vegetable Salad

Eating well means that we include as much fruits and vegetables in our eating plan as possible.  This recipe can be served for breakfast with wholegrain/wholewheat bread. It can also be served as a snack or a light lunch or supper.  The combination of greens, tomatoes, herbs and corn give an amazing flavor and packs a healthy dose of needed vitamins and minerals

Tuna Vegetable Salad

1 can tuna
4 lettuce leaves
1 tomato
1/4 cup corn
2 cloves garlic
1 tbsp apple cider vinegar
1 tbsp coconut/olive oil (optional)
onion
chives
sea salt

Method
Open can of tuna and place in bowl.  Wash and shred lettuce leaves and add to the bowl.  Dice tomatoes and grate or crush garlic.  Add tomatoes, corn and garlic to bowl.  Lightly toss.  Add either coconut oil or olive oil (you can do both if you wish  - 1/4tbsp of each).  Chop onions and chives.  Add to bowl with a dash of sea salt.  Toss everything and ensure the seasonings and oils are evenly distributed in the salad.

Salad of the Day - Lettuce Sesame

Lettuce Sesame

Lettuce leaves
Sesame seeds
sea salt
honey

Method
Shred lettuce leaves in large bowl.  Add quantity of sesame seeds according to your personal preference.  Sprinkle sea salt.  Drizzle with honey.  Toss and enjoy!

My budding chefs/Lettuce roll ups

Early last month the boys and I had a ball in the kitchen.

I needed to give them a mid-morning snack and wanted it to be a healthy one. I drew on the tips and knowledge gleaned from other moms on the web and realized that if they were involved in the process they would be more enthusiastic because they made it themselves.

Now something you have to know about my boys. They are not ones to whine and gripe and complain. They basically eat whatever we give them and they are also very into the healthy eating. But since they had never had that particular snack before I drew them into the kitchen with the words - "Boys, I have a surprise snack for you. You are going to make it yourselves." That alone got them excited - the words surprise and the idea that they were going to do it themselves.

My budding chefs thoroughly enjoyed themselves that day and when their father came home they boasted and proudly told him of all they did. I love being a mother and bringing joy to my children. It's a dream life.

Here are the pics from our day in the kitchen:

The first item - lettuce
The second item - tuna spread(I used Nasoya in place of the mayonnaise because we no longer eat cow's milk products):

Put the lettuce leaf on a plate:
Take some tuna spread:
Spread the tuna spread on the lettuce leaf:
Take some diced cucumber:
Put in on top of the tuna spread:
Roll it all up together:

And you have a lettuce roll up. Sorry but I missed taking a picture of the rolled up lettuce but here is an assembled one before it is rolled up. Yum-yum.

This is a wonderful snack for someone who wants to avoid the gluten in tortillas. You also have the power of the greens with the lettuce leaves. They want to try spreading some of my homemade cashew butter on the leaves and then topping it with bananas next time. Sounds yummy! Like I said budding chefs:)
