Avocado Egg Bites Recilpe

This recipe is a derivative of the avocado pizza recipe I posted before.  It tastes good and is a different way of eating avocado. It can be used as an appetizer or just a snack. Delicioso. I've linked to the dough recipe which can be used for this.


Avocado Egg Bites


2 eggs
1 avocado
1/2 onion
Sea salt
1 clove garlic

Method
Roll out dough and put to bake for about 10 minutes. While dough is baking, put eggs to boil.  Peel avocado and place in a bowl.  Grate onion and garlic and add to the bowl. Mash avocado with the onion and garlic and add sea salt.  When eggs are done, let cook slightly, then slice.  When dough is done, let cool slightly then paste with the avocado mixture. Cut into pieces the approximate size of your egg slices. Add the egg slices on top of the avocado mixture. Sprinkle with a bit of sea salt and voila! You're done.  Serve and enjoy!

P.S. A little cayenne pepper should kick this up quite a notch.

Breakfast Ideas

Welcome to our 2nd edition of breakfast ideas. A showcase of breakfasts we've eaten as a family to help trigger ideas for your own vegetarian breakfasts. Feel free to share your breakfasts in the comments as well so I could get some ideas too.

Scrambled eggs, Carrot and Green Bell Pepper Saute and Wholewheat Plait Bread

Breadfruit, Tuna, Avocado

Sauteed Christophene (Chayote), Lettuce and Tomato

Wholewheat bread, Avocado Pizza, Boiled Egg, Banana Coconut Muffin

Breadfruit, fish eggs in coconut milk, tomato avocado salad

Scrambled eggs, Avocado, Mango and Papaya(Pawpaw)

Avocado Pizza Recipe

I got this idea while browsing the internet for recipes using avocado. The original recipe had bacon and a fried egg in the middle.  I don't eat meat and did not want to fry the egg so I came up with my version and called it a pizza.  LOL.

Avocado Pizza


Wholewheat dough
1 avocado
2 tomatoes
4 eggs
1/2 onion
Sea salt

Method
Place eggs in a pot of water to cook.  While eggs are cooking roll out dough to your desired pizza shape and size.  Place in oven and bake.  While dough is baking peel and mash avocado.  Add sea salt and mix well.  Set aside. Slice tomato, onions and boiled eggs.  Remove dough from oven when done and follow the rest of the steps below under each picture.

Spread avocado mixture on pizza dough. 


Add sliced tomatoes and onions.


Add egg slices.

Place in oven for about 5 minutes or so.  And voila! Cut into slices, serve and enjoy! My son sprinkled a bit of sea salt and cayenne pepper on top of his and it tasted fantastic!
Sprinkle a bit of sea salt and cayenne pepper on top for an added kick.

N.B. Please do not leave the avocado pizza in the oven for a very long time. It changes the taste of the avocado.
