Green Banana and Ripe Plantain Patties Recipe

This recipe was an experiment. I like trying new things with the everyday foods we eat. I like to keep it varied so we don't get tired of eating the same thing over and over.  It came out pretty well so I'm sharing it with you today.

Green Banana and Ripe Plantain Patties


Green Banana and Ripe Plantain Patties


2 green bananas
1 ripe plantain
1 sprig celery
1 sprig parsley
1/4 onion
Sea salt
1 clove garlic
1 tsp curry
Coconut oil/Olive oil

Method
Peel green bananas and plantain. Place in a pot of water, add some sea salt. Cover and let cook. In the meantime chop parsley, celery, onion and garlic. When the green bananas and plantain is cooked, drain the water and mash.  Add the chopped seasoning and curry. Mix well. Add more sea salt if needed and additional seasoning according to your taste. Heat coconut oil in a frying pan and add mixture by spoonfuls into the oil. Fry until golden brown. Serve and enjoy!

Lunch Ideas

Breakfast Ideas

Here is Breakfast Showcase #1. These are some of the breakfasts we've had. Like I wrote in the 30 Day Nature Isle Recipe Marathon Wrap Up, these are to help trigger ideas as to how you can incorporate more vegetables into your breakfast meal. Rice and PlantaIns

This was actually prepared by my sons at my instruction. It was very simple and very delish!


Rice and Plantains

3 cups rice
Water
Sea salt
2 ripe plantains

Method
Put rice to boil with just enough water to about an inch over the level of the rice.  Add salt to your taste.  Peel and slice plantains. When rice is almost done, put in plantains and cover.  When rice is done, fluff the rice and serve.  Enjoy!

Raw Plantain & Cooked Provision Salad

I cooked this dish as part of lunch yesterday using leftover cooked ground provisions I had on hand. The boys and my hubby all enjoyed it. I particularly liked the mix of sweet, sour and slight sting(from the garlic). I will most likely do this one again.

Raw Plantain & Cooked Provision Salad


2 very ripe plantains
2 pcs steamed dasheen
2 pcs steamed white yam
2 pcs steamed sweet potatoes
2 small steamed tanias
1/2 cup frozen peas & carrots
2 tbsp grated garlic
1 small onion
Mayonnaise
Sea salt

Method

Put frozen peas & carrots in a little warm water to help it come to room temperature.  In the meantime, dice plantains, dasheen, white yam, sweet potatoes and tanias. Set aside in a bowl.  Grate garlic and add to bowl.  Peel and coarsely chop onion and add to bowl as well.  Drain peas & carrots and add to bowl.  Add mayonnaise and a dash or two of sea salt. Mix all together and enjoy!


Note: I added the sea salt because the provisions were steamed. If the provisions are boiled with salt there should be no need to add extra salt. Too much salt is not good.

Note too: You can use any provisions you have on hand. This is one of those very versatile recipes that will not suffer because you substituted or omitted a ground provision. However if you omit the plantains you won't have the same taste.

Raw Food Snack - Seasoned Plantains

This snack is super simple and easy to make.

Seasoned Plantains



4 ripe plantains
1 tbsp celery/parsley, chopped
sea salt
coconut/extra virgin olive oil
honey

Method
Slice plantains thinly.  Add celery or parsley or both.  Sprinkle a bit of sea salt.  Drizzle coconut oil and honey over it.  Mix well.  Enjoy

Variation
This second picture shows our son Judah's variation of this snack.  Add sliced bananas and a few raisins and enjoy. 

 
Both versions were yummy.
