Pumpkin Rice Recipe

This is a very simple recipe that I've done quite a bit for lunch. I love the taste of pumpkin especially in a pumpkin soup.


Pumpkin Rice Recipe

1 large chunk of pumpkin
1 cup rice
Sea salt
Coconut oil/olive oil

Method
Put rice to cook in a pot or rice cooker with salted water.  While rice is cooking, wash and grate pumpkin leaving the skin on.  When rice is almost done, add pumpkin and coconut oil or olive oil.  Stir and cover.  When rice is done cooking stir again. Serve and enjoy!

Celery Rice Recipe

Celery is a delicious herb to add to any dish. 

Celery Rice


Celery Rice


1 cup rice
5sprigs celery
Sea salt
Coconut oil/Olive oil

Method
Put rice in a pot or rice cooker. Add water to about 1 inch above level of rice.  Add sea salt and a tbsp of coconut oil or olive oil.  Cover and let cook. While rice is cooking chop celery and set aside.  When rice is almost done, add chopped celery and mix well.  When rice is done, stir again.  Serve and enjoy!

Vegetarian Lunch Idea or Dinner idea: Serve celery rice with peas or beans and a salad.  Enjoy!

Yellow Vegetable Rice Recipe

When I did this recipe during the week my 10yr old son said it looked like Sunday food because Sunday food always seems better even though it may be the same meal as a week day.  Funny child.  Here is the 30th recipe in our 30 Day Nature Isle Recipe Marathon.


Yellow Vegetable Rice


1 cup rice
1 carrot
1 small beet (or 1/2 normal size beet)
1 handful spinach leaves
1/2 onion
3 cloves garlic
1 tsp turmeric powder
Dash of curry
Sea salt

Method

Put rice in pot or rice cooker and add water to about 2 inches above the level of the rice.  Add sea salt and 1 tsp turmeric powder. Cover and let rice come to a boil.  Lower heat. While rice is cooking grate carrot and beet and set aside.  Chop spinach leaves and grate garlic. Slice onion and in another pot saute the onions in coconut oil or olive oil until translucent.  Add a dash of curry, the vegetables and a bit of sea salt. Saute vegetables for about 3 minutes then add garlic.  Stir well and turn off heat.  When rice is done add sauteed vegetables and a drizzle of coconut oil or olive to rice and mix well to incorporate vegetables.  Serve and enjoy!

Spinach Rice

This is the 23rd recipe in our  30 Day Nature Isle Recipe Marathon.


Spinach Rice


1 cup chopped spinach
1 cup rice
Sea salt
1- 2 tbsp coconut oil/olive oil
Water

Method
Put rice and salt in a pot or rice cooker and add water to about 2 inches above the level of the rice.  Let come to a boil and after about 10 minutes add spinach and oil.  Lower heat and cover.  After about 5 minutes, stir.  When rice is cooked, stir again.  Serve and enjoy!

Beet Rice

This is the 8th recipe in our 30 Day Nature Isle Recipe Marathon.



Beet Rice


1 cup rice
1 beet
Sea salt

Method
Place rice in rice cooker or pot.  Add enough water to about 1 inch above the level of the rice.  Add sea salt, cover and let cook.  While rice is cooking, wash and grate beets and set aside.  When rice is almost done.  Add beets and stir to mix well. Turn off heat when rice is cooked and stir again to ensure the beets are thoroughly mixed in.
Serve and enjoy!

Sorrel Rice

Here is another recipe using sorrel leaves left over from making sorrel drink.

Sorrel Rice

Sorrel Rice

2 cups sorrel
2 cups rice
Water
Sea salt

Method
Put sorrel, rice and sea salt in pot or rice cooker.  Add enough water to cover the rice, to about one inch above the rice.  Cook until rice is tender.  Enjoy!

Variation - You may add sweetener to make it a sweet dish if you like. I imagine it would be rather interesting to have sweet sorrel rice.

Rice and PlantaIns

This was actually prepared by my sons at my instruction. It was very simple and very delish!


Rice and Plantains

3 cups rice
Water
Sea salt
2 ripe plantains

Method
Put rice to boil with just enough water to about an inch over the level of the rice.  Add salt to your taste.  Peel and slice plantains. When rice is almost done, put in plantains and cover.  When rice is done, fluff the rice and serve.  Enjoy!

Vegetarian Recipe: Carrot Rice

This one is very simple and takes very little preparation time. You know how I like simple.

Carrot Rice

Carrot Rice

2 cups cooked rice
1 cup grated/shredded carrots
2 cloves grated garlic
1/2 onion (grated)
3 tbsp coconut oil/olive oil

Method
Stir in the carrots, garlic and onion.  Add oil of your choice and mix well. Enjoy!

And voila! There you have it - carrot rice.  Very simple. This one can be called a 50% raw dish.  If you increase the amount of carrot it will be even more.

75% Raw Food Recipe: Rainbow Rice

This recipe is a favorite of our family. As sometimes happens I used what I had in the fridge and came up with this dish.  I love that it is high raw.

Rainbow Rice

2 cups rice cooked
1 cup tomato diced
1 cup carrot grated
1 cup cucumber diced
1 cup pumpkin grated
3 cloves garlic
1/2 cup onion grated
sea salt

Method
Mix all ingredients well. Adjust seasonings to taste. Enjoy!  Very simple, just how I love it.
