Sorrel Rice

Here is another recipe using sorrel leaves left over from making sorrel drink.

Sorrel Rice

Sorrel Rice

2 cups sorrel
2 cups rice
Water
Sea salt

Method
Put sorrel, rice and sea salt in pot or rice cooker.  Add enough water to cover the rice, to about one inch above the rice.  Cook until rice is tender.  Enjoy!

Variation - You may add sweetener to make it a sweet dish if you like. I imagine it would be rather interesting to have sweet sorrel rice.

Sorrel Muffiins

When sorrel is in season we make lots of sorrel drink and there are the leaves left over. I am one who likes to make use of as much of a vegetable or fruit as possible.  So I wondered what to do with the sorrel leaves.  Then it hit me I could puree them and make some recipes with them. Here is one of the recipes I came up with. I did it back in January and in the Celebrating Today post I promised that I would share the recipe.  Here it is:

Sorrel Muffins

Sorrel Muffins


2 cups pureed sorrel
1 cup water
3 cups wholewheat flour
1/4 cup brown sugar
1 tbsp baking powder
1 tsp salt

Method
Mix dry ingredients together well.  Add the sorrel and water. Mix well.  Here is a picture of what the batter looks like:

 Bake at 350 degrees for about 15 minutes or until knife inserted in the center comes out clean.

Refreshing Sorrel Drink

This drink is looked forward to every year during end of year celebrations all over the island.  It is deep red in color and very refreshing. It's an island tradition and one of my most favorite drinks. As a matter of fact, I've been known to freeze sorrel just so I can have the drink at other times of the year.

Sorrel Drink

Sorrel Drink

Sorrel
Water
Ginger
Cinnamon bark
Bay leaves

Method
Put water, ginger, cinnamon and bay leaves in a pot and bring to a boil.  Add sorrel leaves and leave to steep for a few hours, preferably overnight.  The longer it steeps the stronger, richer and tastier the drink.  Squeeze the leaves and set aside. Sweeten the liquid to taste and refrigerate.  Enjoy when thirsty or when you have company over.
