What We've Been Eating - Part 2 of 2

I shared with you in a previous post what we've been eating for breakfast. Here's the second installment - lunch. The meals are separated with stars.

Blackeye peas topped with carrot, spinach and cucumber slaw and a lentil pattie:

Sweet potatoes, green bananas, yam, lentils and carrot & cabbage slaw:

Wholewheat rotini pasta tossed with corn and spinach shreds served with lentils:


Homemade whole grain bread with fish, lentils and fried plaintains:

Rice and beans, fried plaintains, tossed salad(lettuce, spinach, carrot, cucumber, tomato tossed with extra virgin olive oil and sea salt):

Three bean soup with a salad(lettuce, spinach, tomato, shredded carrot, cucumber tossed with extra virgin olive oil, sea salt and a bit of sweetener):

Rice with sprouted lentils, lettuce, mix of spinach, tomato and tuna:

This is what I call a mix-up(leftovers mixed together - black beans, green bell pepper, mixed vegetables, tomatoes, sprouted lentils and rice and soya chunks):

Plaintain coated with coconut fried in olive oil, broiled fish in a mango sauce topped with papaya:

Roasted breadfruit, tomato slices, plaintain, rice & sprouted lentils, cabbage and bell peppers in a creamy sauce:

Yellow vegetable rice(color from turmeric), shredded carrot & beet salad, steamed green beans, breadfruit, blackeye peas:

Callalou soup (made with coconut milk, spinach, tania and white yams):


God has blessed us with yummy food. All praises to Him. You are always welcome to our house for a meal or two.
