I love colorful foods. It's a joy to sit down to eat a plate filled with colorful foods. This dish came together so well. There's green, orange, red and white. It's too good not to share.
Potato & Beet Plus Salad
5 potatoes
2 small beets
1 carrot
1/4 cup spinach
1 green bell pepper
1/2 onion
1 clove garlic
Mayonnaise
Sea salt
Method
Wash, peel, and steam potatoes.
While potatoes are steaming, grate beets, carrot, onion, and garlic.
Place in a bowl.
Slice green bell pepper into strips and add to the bowl.
Chop spinach and add to the bowl (spinach can be steamed or raw).
Dice potatoes and add to the bowl.
Add mayonnaise and a few dashes of sea salt.
Mix everything together.
Enjoy!
