Epplant held no curiosity for me until one day we were blessed with it by someone. It is a beautiful purple vegetable and good for so many things. Eggplant just like most fruits and vegetables are power packed. It is beneficial to optimal health in so many ways. Here are the ways that eggplant can benefit all of us:

      I have to admit that I had never tried eggplant before I got married. My husband is part Italian so he made some delicious meals with eggplant. Interesting to learn more about here on your site. Eggplant is not exactly my favorite but I like it stuffed, or in moussaka. Have a wonderful weekend!
